The Beginning of Our Little Dream

Getting the keys on the 6th of November was one of those moments that felt unreal. Exciting, slightly terrifying, and full of possibility all at once. From that day on, everything moved quickly -and slowly - at the same time.
The weeks that followed were filled with long days, very short nights, and more cups of coffee than we care to admit. We quickly learned what running on little sleep actually feels like (spoiler: it’s not glamorous). There were moments of exhaustion, frustration, and doubt, but also moments of quiet pride when something finally came together.
This journey has tested us in ways we didn’t fully expect. We’ve made mistakes, learned as we went, and had to push ourselves far outside our comfort zones. But through it all, we’ve grown - not just in what we can do, but in confidence and resilience too.
I have to say how incredibly proud I am of my husband. The amount of effort, patience, and determination he’s poured into this place has been amazing to witness. He’s carried so much of the work on his shoulders, always showing up, even on the hardest days.
Our dogs have been right there with us through it all - patiently waiting, watching the endless comings and goings, and reminding us to stop for a moment. We like to joke that they’ve gone from border collies to super bored collies with all the waiting around they’ve had to do.
Now, as things slowly start to take shape, we’re moving into the next stage - working on the menu, refining the details, and bringing everything together. It finally feels like the vision we had in our heads is becoming something real.
